Buttermilk Biscuits

Bake 425°: 20 to 25 Min

Biscuits have been apart of my family since my childhood. Watching my mother, grandmothers and aunts create biscuits from scratch was a love language passed down to those within my family who weren’t afraid to take on such a daunting task to create biscuits that graced every breakfast and dinner table. Over the years, I have adapted and created several of my own biscuit recipes that would make my grandparents proud if they were alive today. These biscuits should be baked with the all the love in the world. Even though baking is a science, don’t forget to have fun!

Ingredients

4 Cups - Unbleached All-Purpose Flour

4 Tbsp - Baking Powder

1 Tsps - Baking Soda

1 Tsps - Kosher Salt

16 Tbsp (2 Sticks) - Unsalted Butter

2 Large - Eggs

2 Cups - Buttermilk

Instructions

  1. Combine flour, baking powder, baking soda, kosher salt in a bowl.

  2. Dice or grate two sticks (16 tablespoons) of unsalted butter into dry ingredients.

  3. Take a pastry cutter or your fingers and gently cut butter into the dry ingredients until you get small pea size pieces of butter.

  4. In a small bowl combine 2 large eggs and 2 cups of very cold buttermilk.

  5. Whisk wet ingredients until combined.

  6. Combined wet and dry ingredients. Stir with a wooden spoon until dough is firm.

  7. Turn dough out onto a floured surface.

  8. Form dough into square and roll out with a French rolling pin until dough is ¼” thick.

  9. Take one end of the dough and fold it into to center. Take the other end of the dough and fold into the center. Dough should appear to have 3 layers. Roll out dough again gently.

  10. Repeat step nine, three or four times or to your desired liking without overworking the dough.

  11. Once dough is rolled out for the last time, take your desired biscuit cutter and cut biscuits from the dough and place them on a parchment lined baking sheet.

  12. After biscuits are arranged on the baking sheet, brush biscuits with egg wash ( 1 egg whisked with a tablespoon or two of water) and sprinkle with sea salt (optional)

  13. Bake biscuits at 425 degrees at 20 to 25 min.

  14. When your biscuits are golden brown on top , remove biscuits from the oven. Brush the biscuit tops with melted butter (optional).

  15. Serve warm with whatever jam, preserves or spreads you have on hand.
