Hamburger Helper from Scratch
There's something nostalgic about Hamburger Helper – that familiar box that's saved countless busy weeknight dinners. But what if I told you that making it from scratch is not only simple but delivers an even more delicious result? Today, I'm sharing my go-to recipe that brings all the comfort of the classic, with ingredients you can actually pronounce.
Why Make It From Scratch?
Store-bought Hamburger Helper certainly has its place, but making it yourself allows you to control the ingredients, adjust the seasonings to your taste, and create a meal that's free from preservatives and artificial flavors. Plus, the homemade version has a depth of flavor that the boxed version just can't match.
Ingredients
2 pounds lean ground beef
1 medium onion, diced
1 medium green pepper, diced
1 bulb roasted garlic or 3 cloves garlic, minced
3 cups elbow macaroni or pasta of your choice(uncooked)
3 to 4 cups beef broth (low-sodium)
1 cup half and half
1 can tomato paste
2 tablespoons tomato paste
1 tablespoon paprika
2 teaspoons cajun seasoning
2 teaspoons oregano
2 teaspoons garlic powder
2 teaspoons onion powder
½ cup mascarpone cheese
1 cup shredded cheddar cheese
Salt and pepper to taste
2 tablespoons fresh parsley, chopped (optional)
Instructions
In a large skillet or Dutch oven, brown the ground beef over medium-high heat, breaking it up into small pieces as it cooks. Once no pink remains, drain excess fat if needed.
Add the diced onion and green pepper to the meat and cook until softened, about 3-4 minutes. Add the roasted or minced garlic and cook for another minute until fragrant.
Stir in the paprika, cajun seasoning, garlic powder, onion powder, and oregano. Toast the spices for 30 seconds to release their flavors.
Add the uncooked macaroni, beef broth, milk, and tomato paste. Stir well to combine.
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, or until the pasta is tender, stirring occasionally to prevent sticking.
Once the pasta is cooked, remove from heat and stir in the mascarpone cheese, shredded cheeses until melted and creamy.
Season with salt and pepper to taste, and garnish with fresh parsley if desired.
Make It Your Own
This base recipe is incredibly versatile. Here are some ways to customize it:
Swap ground turkey or chicken for the beef
Add diced bell peppers or mushrooms for extra vegetables
Use different cheese combinations like monterey jack or pepper jack
Spice it up with cayenne pepper or hot sauce
Make it creamy by adding a splash of heavy cream at the end
Storage and Reheating
This homemade Hamburger Helper actually tastes even better the next day! Store leftovers in an airtight container in the refrigerator for up to 4 days. When reheating, add a splash of milk or broth to restore the creamy texture.
Final Thoughts
Once you try this homemade version, you might never go back to the box. It's just as convenient but packed with real ingredients and authentic flavors. Plus, it's a one-pot meal that comes together in about 30 minutes – perfect for those busy weeknights when you want something comforting and delicious.
