Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 ½ cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1½ cups Fruity Pebbles cereal
½ cup rainbow sprinkles, plus extra for topping
Optional: 2 tablespoons of lemon juice
Instructions
Prep: Preheat your oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats.
Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
Cream Butter and Sugars: In a large bowl using a hand mixer or stand mixer with paddle attachment, beat the softened butter for about 1 minute until smooth and creamy. Add the granulated sugar and beat on medium-high speed until fluffy and light in color, about 2-3 minutes.
Add Wet Ingredients: Beat in the eggs one at a time, then mix in the vanilla extract and lemon juice(if using). Scrape down the sides and bottom of the bowl as needed.
Combine Mixtures: Gradually add the dry ingredients to the wet ingredients and mix on low just until combined. Do not over-mix.
Add the Fun Stuff: Gently fold in the Fruity Pebbles, rainbow sprinkles with a rubber spatula. The cereal will soften slightly as it sits in the dough, but will still provide a nice crunch and fruity flavor.
Chill the Dough: Cover the cookie dough and chill in the refrigerator for at least 30 minutes (up to 3 days). This helps prevent spreading.
Scoop & Shape: Once chilled, scoop rounded tablespoons of dough (about 1.5 tablespoons each) and roll into balls. Place on the prepared baking sheets about 2 inches apart. Press a few extra Fruity Pebbles and sprinkles on top of each cookie for a more colorful appearance.
Bake: Bake for 13-17 minutes until edges are lightly golden. The centers will look soft and slightly underbaked, but they'll firm up as they cool.
Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

For the best texture contrast, don't crush the Fruity Pebbles before adding to the dough.
